“Irie Toyosaburo Honten”, one of the four leading Houmei liquor breweries that inherit the Nakamura family tradition, started their business in 1886. Since then, almost every steps have been done by hand, from steamed rice to the making of rice at their breweries inTomo-cho.
They produce “Houmei-shu no Hana”, adding mirin and sugar to the sake lees made when squeezing the original sake, which are getting very popular. It is also recommended to make sweet sake by adding on ginger or to eat them by lightly smoked. The tools used to squeeze the original sake are made in 1931 and look very old, but these tools make sake lees more soft as they contain a lot of water than usual.
They offer varieties of products lined up in the shop, such as unique products like “Tomonoura Cider”, “Houmei liquor candy”, “Tomonoura Ramen” which they create both noodle and soup adding on Houmei liquor, as well as ceramics that are Bizen ware and Tanba ware, of course Houmei liquor filled in Tokkuri bottle, making the shop even more vibrant. Remarkably, Hon-mirin labelled red Tomoe mark are not to be missed. In particular, “Handmade Hon-mirin”, a three-year ripening of the original sake used by only Hiroshima-produced rice, is a limited number of sales once a year, and it is extremely difficult to obtain.
